J.J. Corry, Ireland’s first modern Whiskey Bonder located in the parish of Cooraclare, on the McGuane family farm in Co. Clare, is just 45 minutes from the gates of Dromoland Castle.
The partnership sees Dromoland Castle and J.J. Corry come together to practice the art of Irish whiskey bonding, the sourcing of whiskey from third party Irish distilleries before maturing it on-site and then finishing or blending it to create unique, stand-alone whiskeys. J.J. Corry’s approach to ageing, just like their approach to farming, is to work hand in hand with nature. With its positioning on the Wild Atlantic Way, the rackhouse has its own unique microclimate, fantastic for aging whiskey.
